Trick or treat surprise cake

Hello Lovelies! For Halloween this year I wanted to try baking something a little bit different, so I came up with the idea of doing a surprise inside cake following on the Halloween theme of Trick or Treat? Surprisingly it's super easy to make, so I recommend giving it a go if you want a cake that will wow but don't want to put in too much effort. Basically my favourite kind of cake...


Now I'll be honest usually I'd make this from scratch, but I have a terrible track record with making crumbly cakes. So this time I majorly cheated creating this cake with the Betty Crocker Sponge Mix, and Vanilla frosting. But really all you need for this cake is a good sponge recipe (or you can cheat like me!) jam and frosting. To make the cake you can either create four layers of sponge, three, or one thin sponge and a thicker sponge. Personally I think creating a thin sponge and a thicker sponge is the easiest way especially as most people only have twin cake tins anyway!

Firstly create a basic sponge mixture, and then put 2/3 of the mixture into one greased cake tin, and the rest of the mixture into another cake tin. Then put in the oven, and bake until a skewer comes out clean. Obviously the thinner cake will come out first, so keep an eye on it. Once the cakes are out allow them to stand for about five minutes, then put on a cooling rack. When the cakes have cooled cut a circle out of the centre of thicker cake and fill with your sweets of choice to the top of the cake. Smarties are a great choice, but whatever works really! Once you've filled it with sweets, put a layer or jam or frosting if preferred (or even both) onto the thicker cake, and then secure the thinner cake on the top. 

Finally all that's left to do is cover the cake with frosting so that you can hide the surprise inside! I decided to mix blue food colouring into my frosting to give it a colourful Halloween twist, but plain frosting will look great too. And that's it you have your cake with a hidden surprise inside - pretty simple really!
